Chocolate Blackberry Banana Muffins

I had three bananas sitting on my counter that were overripe.  I probably would have still used them in my morning cereal...but I was out of milk.  Gr.  Everyone knows what you do with overripe bananas...you make banana bread or some variation of it.  So with it being a chilly, rainy day that's what I did!  I just tweaked the recipe a bit.

1/3 cup oil
1 cup sugar
1/4 cup water
2-3 bananas
2 eggs
1 tsp lemon juice
2 cups flour
1/2 tsp salt
1 tsp baking soda
1/2 tsp cinnamon or nutmeg (or both!)
1 tsp vanilla
1/2 cup baking cocoa (optional)
1/3 cup chocolate chips
Everything mixed together
1/3 cup blackberries (or strawberries, raspberries...)

In a bowl, combine the oil, water & sugar.  Then add the eggs, bananas (You can mash them but I like to slice them....that's just me) and the lemon juice.  Mix well.  In a different bowl, combine the flour, salt, baking soda, cinnamon/nutmeg, vanilla, and baking cocoa.  Mix well.  Combine with the other bowl.  Once they are well mixed add the chocolate chips and berries.

Ready to bake!
Scoop into a lined muffin pan.  Bake at 375 for 10-15 minutes.  Cool and enjoy!  I know they're not healthy but I like delude myself considering that they have bananas AND blackberries in them!

The recipe makes about 24 muffins, depending on how big you make the muffins.  I don't need to eat 24 of them before they go bad, so once they cool I'll freeze most of them.  That way when I want one, I'll take it out and let it defrost on the counter.  It usually only takes about 30 minutes and then you have a delicious muffin to eat.
