Mug Cake

Sunday night I was craving a little snack.  I wanted something cakey.  So I decided to make a mug cake! I had never made on before so I googled mug cake recipes.   This one looked pretty easy so I tried it:

3 MINUTE CHOCOLATE MUG CAKE

1 Coffee Mug
4 tablespoons flour (that's plain flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional) mini chips would be the best
Small splash of vanilla 

Add dry ingredients to mug, and mix well. 
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla, and mix again.

Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed!

Step 4. Add vanilla and chocolate 

I didn't take a picture of this step but I added full size chips.  I didn't measure, I just poured them in.

Step 5. Microwave.  

I didn't take a picture of this either...but I had to microwave for an extra minute.

My thoughts:

It was good but a little too much for me.  I didn't finish it.  And the chips all sank to the bottom and it was super rich..too rich for me.  I'll try it again but tweak it next time.

    i do a mug cake/brownie for hubby and i when i'm craving a sweet too.  it's decadent, sinful tasting but actually good for you!
    you need:
    1 mug, 1 scoop chocolate protein powder (i LOVE muscle milk) and 1 tbs of nut butter
    then you:
    place the powder in the mug with just a splash of cold water and mix together.  add enough water until it looks like a thick batter.  then slap the nut butter in the middle.  microwave for about 30-45 sec.  let it cool for about a min before eating it.  
    best brownie EVER!!

I've tried a few mug cake/brownie recipes and this one is my favorite: http://www.instructables.com/id/Mug-Brownie/  It definitely needs some type of iced cream/whipped cream and 2 people to eat it though, even though I LOVE chocolate.  Also, make sure to let it cool for a bit before eating--I always forget that step and regret it.

  7. This sounds SO delicious...and much easier than baking a whole cake (which is also dangerous, I might add!).  This is a perfect impromptu recipe for my Hubs...I'll have to try it!
