Easy Lunch: Chicken Quesadillas

I don’t menu plan for lunch and sometimes I’m at a loss for what to eat.  Many Waters Chicken QuesadillasMy mom requested Chicken Quesadillas.   They were easy to make and super yummy.  These are going to become a go-to lunch!  Even Munchkin ate them!  I don’t know how they’re really supposed to be made, but this is how I make them.  

Ingredients:

2 chicken breasts, cooked and shredded/sliced (I boiled the breasts and kind of shredded/sliced them.  I wanted them as flat as possible.)

1 green pepper, sliced

1/2 yellow onion, sliced

1-2 tablespoons soy sauce

grated cheese

tortillas

salsa (optional)

Steps:

1.  In a small frying pan, heat some oil.  If you boiled your chicken, throw it in the pan to brown.  Once the chicken has reached the desired amount of brownness, add the onion and pepper.  Cook until veggies have reached your desired softness.  (I like my peppers crunchy but DH doesn’t, so I cook them longer for him.)  Add 1 tablespoon of soy sauce and stir to thoroughly mix.  If that’s not enough for you, add more.

2.  Heat a large pan with no oil.  In it, place a tortilla.  On one side, sprinkle some cheese.  On top of the cheese, place the chicken, onion and pepper mixture.  Top with a little more cheese.  Fold the tortilla over.  Let the tortilla get a little brown and the cheese all nice and melty.  Once it’s brown and melty, carefully flip it over.  Let the other side get brown and melty too.

3.  Carefully transfer to a cutting board.  Using a pizza cutter, cut the tortilla into four pieces.  Place on a plate with some salsa and enjoy!

  4. These do look really easy to make. I've never thought of using soy sauce on chicken that I was going to eat in a quesadilla with salsa. What a clever idea! I bet it's tasty.
