Roasted Chicken

Yummy roasted chicken!
While I was grocery shopping at the commissary last week I decided to pick up a whole chicken.  We usually just buy boneless, skinless chicken breasts at Costco but I've been in the mood to make homemade broth.  A whole chicken is good for that.  I've never roasted a chicken before but I was ready for an adventure.

Homemade Stuffing
Drawing on my memories of my parents making Thanksgiving stuffing I decided to make my own and stuff the chicken.  I used homemade bread, 1/2 a large white onion, 1 whole apple, some spinach and smokey red pepper seasoning, fresh parsley, chive and basil along with a little milk to help make the bread moist.  Mix it up and stuff it in the bird.  After you remove the giblets and wash it of course!  I had too much stuffing so I put around the out side of the chicken.  I spritzed the chicken with some olive oil to help the skin become crispy and sprinkled some rosemary herb seasoning mix on top.  I baked it for about an hour and half...well, maybe 2 hours.  I had it covered for the first hour.  I basted it with some chicken broth when I took the cover off.  Then I let it continue baking until the internal temperature was at least 165 degrees to be sure it was fully done.
Make sure to bake until it's at least 165 degrees

The chicken was moist and delicious.  We had it with a baked potato, corn and stuffing.  The Man and I have decided that I have a way with chicken while he is the pork master.  We are definitely not going to starve in our house!

Now I'm looking forward to throwing the carcass in the crock pot with waster, celery, onion, carrots and parsley to make some chicken broth.  Then I'll make some homemade chicken soup...YUM!

  1. I just got the recipe for my friend's Sweet Chili. I'm not a big fan of hot and spicy so when she made her chili I just devoured it. This month I'll be trying her recipe for my New Recipe of the Month dinner... and depending on how it turns out, I might just share. LOL

  2. Mmm! I have been craving a full-on turkey dinner for a couple of weeks now, complete with stuffing and cranberry sauce. Must be the fall thing. Your stuffing sounds delish!
